I should probably know this, but is there any difference in the metallurgy between a stock roller v. stock slider cam. I'm not talking about geometry or lobe configuration, I'm talking about the metal itself.

Yep.

Slider cams are usually made of a chilled iron material while the roller lobes are a [slightly] hardened steel. Totally different wear characteristics.
